Party Girl Celebrates :: Cinco de Mayo!

I love any excuse for a party and Cinco de Mayo is a slam dunk.  All you need is bright colored flowers, my Can-Can Salsa, chips, and a fabulous margarita (blackberry anyone?)  – add a piñata and the kids will be in heaven.  Make this a part of your regular Tuesday Taco night and every Tuesday can be Cinco de Mayo.  It doesn’t take a lot to make a party – just the right attitude and a few tricks up your sleeve.  Here are mine ::

Never have five ingredients been able to sustain a party like these five ingredients can sustain a party. The best part about this salsa is that it takes minutes to throw together and because most of it comes from a can, you can pull it off at a moment’s notice.

1 can corn, drained
1 can black beans, drained
2 medium tomatoes, chopped
1/2 cup cilantro, chopped
1 can El Pato Salsa de Chili Fresco

Mix all ingredients together.  Let sit at least one hour.  Serve with chips.

Makes 4

2 cups fresh blackberries
1 cup tequila
1/4 cup chambord
the juice of one lime
lime wedges
salt

Place all ingredients in a blender.  Blend.  Rub a lime wedge around the rim of a margarita glass and dip in salt.  Fill with ice and pour one quarter of the blackberry margarita over ice.  Repeat with the other three glasses and serve.  If you prefer a blended margarita, blend all ingredients first then add two handfuls of ice.  Blend and serve.
