With my new project I have been eating a lot of food that are available only in season. Kale is available year round, I know – but at the farmer’s market this is IT right now. Kale, chard, squashes are easy to find because not a lot of us can’t grow anything else.
If you haven’t tried cooking barley like risotto, then you really must. It’s surprisingly simple, packed with flavor and pretty darn good for you. Add kale (or chard) and a little squash and you’ve got yourself a winner. Bonus : it only takes about a half an hour to cook.
