Easter Inspiration {+ Surprise Egg Krispie Treats recipe}

I may be slightly obsessed with Rice Krispie Treats right now, but they are so tasty.  Then one day, when my mind was wondering, I started thinking about how much I loved the Cadbury Mini Eggs and how many bags I should buy since they disappear after Easter when I came up with the brilliant idea to put Cadbury Mini Eggs INSIDE of Rice Krispie Treats.  My kids almost fainted.

Plus, when they are packaged up inside of the plastic eggs, they make the most adorable treat for sticking in a lunch box or sending to a friend's house.  Just be sure to use a different egg than you molded it in - or wash it really well - all that butter on your hands makes a mess of the eggs.

¼ cup butter
8 ounces marshmallows
6 cups puffed rice cereal (Rice Krispies)
1 cup roughly chopped Cadbury Mini Eggs
24 un-chopped Cadbury Mini Eggs
24 plastic eggs

Rub a piece of paper towel over room temperature butter to transfer a small amount of butter onto the paper towel.  Rub the inside of the plastic eggs with the butter to grease them lightly.  Add more butter to the paper towel as needed.  Set near an open workspace. 

Melt butter and marshmallows in a saucepan at least 4 quarts in size.  When completely melted, remove from heat and stir in cereal to coat evenly.  Quickly stir in chopped eggs. 

Move the pan to your open workspace and rub butter on the palms of your hands.  This will keep your hands from burning and will not allow the marshmallow to stick to you.  Grab a tablespoon or so of cereal mixture and place it in the top of the egg.  Press lightly, but don’t force it.  Stick an un-chopped egg in the center and add cereal mixture around it as needed.  Place a small amount of cereal mixture in the bottom half of the egg and close it together.  Repeat until all eggs are filled.  If you have extra cereal mixture, place it in a buttered baking dish to serve as squares.

Let cool in eggs at least one hour. 

Remove from eggs and serve.  Or send in a school lunch inside the egg for a fun surprise.
